Quinoa Tabbouleh (Middle Eastern salad)


Romaine lettuce

1 cup of water

1/2 cup of quinoa

2 cups of diced tomatoes

1 cup of diced onion

1/4 cup of chopped mint

1/4 cup of sliced green onion

1/3 cup of olive oil

1/3 cup lemon or lime juice

1/2 tsp salt

1/2 minced garlic

1/4 tsp ground cinnamon


I cooked my quinoa in a rice cooker, but if you don’t have one bring water and quinoa to a boil.

Reduced to simmer and cover and cook for ten minutes.

 Gather all ingredients in a bowl and mix. Then fill romaine with ingredients.
